Ingredients

  • 1 (2-pound) green cabbage, cored and cut into 8 wedges
  • 7 thyme sprigs
  • Grated fresh horseradish (optional)
  • 2 quarts water
  • 1 bunch fresh parsley stems
  • 1 bay leaf
  • 1 pound fingerling potatoes, halved crosswise
  • + 3 more ingredients
    • 18 small boiling onions, peeled
    • 1 (3-pound) cured corned beef brisket, trimmed
    • 3 carrots, cut crosswise into 2-inch pieces
