Pesto Meatballs and Couscous

Ingredients

  • 3 tablespoons olive oil, plus more for the pan
  • 1 ½ teaspoons kosher salt
  • 1 10-ounce box couscous
  • 1 large egg
  • 1 ½ pounds ground beef
  • ¾ teaspoon black pepper
  • ¾ cup store-bought pesto
  • + 2 more ingredients
    • ½ cup dried bread crumbs
    • ¼ cup (1 ounce) grated Parmesan (optional)

Heat toaster oven to 350° F. Drizzle 2 tablespoons of the oil over the toaster-oven baking tray and tilt to coat.
