Reuben Croquettes with Swiss Cheese

Ingredients

  • ¼ teaspoon(s) baking soda
  • ½ cup(s) bavarian or regular sauerkraut - squeezed out, reserve the juice
  • 2 cup(s) vegetable oil
  • ½ cup(s) dill pickle - diced
  • 1/3 cup(s) flour
  • ¼ cup(s) cornmeal - any type
  • ¼ cup(s) green onion - thinly sliced
  • + 12 more ingredients
    • 2 teaspoon(s) baking powder
    • 2 teaspoon(s) dry mustard
    • ½ teaspoon(s) kosher salt
    • ½ teaspoon(s) sugar
    • ½ teaspoon(s) cayenne pepper
    • 1 cup(s) cooked corned beef, can use deli corned beef if desired
    • 2 tablespoon(s) sauerkraut juice
    • 1 block of swiss cheese - cut into 15, ½ inch chunks
    • 1 cup(s) rye bread crumbs
    • ½ cup(s) milk
    • 1 egg
    • thousand island dressing for dipping

Combine all ingredients (except oil, cheese and dressing) in a mixing bowl. Cover and chill the batter for at least 15 minutes but can be left overnight if needed. Heat oil in a deep fryer or skillet to 350°. Use tablespoons or a small scoop to measure batter and form into balls. May want to ...
