  • 8 cloves garlic, finely chopped
  • 6 carrots, cut into 1-inch pieces
  • 2 onions, cut into wedges
  • ½ teaspoon dried thyme
  • 2 ½ pounds beef chuck, trimmed of fat and cut into 1-inch cubes
  • Salt and pepper
  • 1 tablespoon red wine vinegar
  • + 4 more ingredients
    • 3 tablespoons vegetable oil
    • 1 bay leaf
    • 1 ½ cups dry red wine
    • 4 tablespoons all-purpose flour
