Skillet Stuffed Peppers

Ingredients
- 1 (20-ounce) package refrigerated mashed potatoes (such as Simply Potatoes)
- Cooking spray
- ¼ cup (1 ounce) reduced-fat shredded cheddar cheese
- 1 (1.25-ounce) package taco seasoning
- Cracked black pepper (optional)
- 2 large green bell peppers, halved lengthwise and seeded
- ¾ pound ground round
