Slow Cooker Galbi Jjim
Ingredients
- 1 teaspoon sesame oil
- 2 tablespoons dark brown sugar
- 1 tablespoon gochujang* (optional)
- 1 tablespoon dark soy sauce
- ½ cup mirin
- ½ cup soy sauce
- for the sauce:

- 2 carrots, cut into 1 inch long chunks
- 2 green onions, cut into 2 inch pieces
- 2 onions, halved and sliced
- 1 pound butternut squash, peeled, de-seeded and cubed
- 4 cloves garlic, sliced
- 4 dried shiitake mushrooms, rehydrated and sliced
- 3 lbs boneless beef short ribs
In a small bowl, whisk together the sauce ingredients. Set aside. Bring a large pot of water to boil. Add the ribs and boil 10 minutes to render off the fat. Use tongs to fish out the meat.
