Spiced Beef Stew with Carrots and Mint

Ingredients

  • 1 ½ teaspoons pumpkin pie spice
  • 2 ½ cups beef broth
  • 1/3 cup fresh mint
  • 2 tablespoons olive oil
  • 1 cup shallots
  • 8 ounces baby carrots
  • 2 teaspoons ground cumin
  • + 3 more ingredients
    • 12 ounces beef tenderloin
    • 1/8 teaspoon cayenne pepper
    • 1 tablespoon all purpose flour

Heat 1 tablespoon oil in large nonstick skillet over high heat. Sprinkle beef with salt and pepper. Add beef to skillet and sauté until cooked to desired doneness, about 2 minutes for medium-rare.
