Ingredients

  • 2 teaspoons dried oregano
  • 1 tablespoon ground cumin
  • 1 (28-ounce) can diced tomatoes, undrained
  • ½ pound dried black beans (about 1 1/4 cups)
  • 2 tablespoons brown sugar
  • ½ to 1 teaspoon crushed red pepper
  • 1 pound boned buffalo steak or beef sirloin steak, cut into 1-inch cubes
  • + 13 more ingredients
    • 1 dried ancho chile (about 1/2 ounce)
    • ¼ cup tomato paste
    • 1 teaspoon paprika
    • 1 cup finely chopped carrot
    • 1 (12-ounce) bottle dark beer
    • 1 cup chopped onion
    • 1/8 teaspoon black pepper
    • ½ teaspoon salt
    • ½ cup finely chopped celery
    • 1 tablespoon olive oil
    • 1 cup finely chopped red bell pepper
    • 10 cup water, divided
    • 1 large garlic clove, minced

Sort and wash beans, and place in a large Dutch oven. Cover with water to 2 inches above beans; bring to a boil, and cook for 2 minutes. Remove from heat; cover and let stand 1 hour. Drain.
