Steak Frites with Shallot Pan Reduction
Ingredients
- ¾ teaspoon kosher salt, divided
- 2 teaspoons chopped fresh thyme, divided
- ½ teaspoon freshly ground black pepper, divided
- 2 tablespoons brandy
- 1 pound boneless sirloin steak, trimmed
- 2 tablespoons finely chopped shallots
- ¾ cup less-sodium beef broth

- 1 ¾ pounds baking potatoes (about 2 large potatoes), peeled and cut into 1/2-inch sticks
