Stuffed Sirloin with Spinach & Bacon

Ingredients

  • • 1 cup parmesan cheese
  • • 3 tbsp butter
  • • 1 12oz box of quinoa
  • • 1 ½ tbsp olive oil
  • • 2 lb beef sirloin tip roast
  • • ¼ tsp ground black pepper
  • 1/8 tsp salt
  • + 9 more ingredients
    • • 1 tsp fresh lemon juice
    • • ¾ c Italian seasoned dried breadcrumbs
    • • 4 oz cream cheese
    • • 8 oz fresh baby spinach
    • • 1 tbsp chopped thyme
    • • 2 tbsp unsalted butter
    • • 2 garlic cloves, chopped
    • • 1 small onion, diced
    • • 8 slices bacon, sliced into small pieces

Directions: Preheat oven to 375. Heat large skillet over medium heat. Add bacon and cook 5 minutes or until crisp, stirring frequently.
