Stuffing Meat Loaf with Marmalade Glaze

  • Kosher salt and black pepper
  • 10 ounces baby arugula (about 6 cups)
  • ¼ cup whole-grain mustard
  • ¼ cup orange marmalade
  • 2 tablespoons extra-virgin olive oil
  • 1 ½ pounds ground beef (preferably chuck)
  • 2 tablespoons balsamic vinegar
  • + 2 more ingredients
    • 2 cups cooked stuffing, roughly chopped
    • 1 large egg, beaten

Heat oven to 400° F. In a large bowl, combine the beef, stuffing, egg, 3/4 teaspoon salt, and 1/2 teaspoon pepper.
