Ingredients

  • 3 tablespoons canned crushed tomatoes
  • 2 tablespoons olive oil
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon kosher salt
  • 1 large onion, chopped
  • 1 bay leaf
  • 1 small clove garlic, minced
  • + 2 more ingredients
    • 3 ½ pounds boneless chuck roast
    • 2 cups good-quality beef stock

Preheat oven to 350° F. Heat the olive oil in a Dutch oven over medium-high heat. Season the boneless chuck with the salt and pepper and sear on all sides until golden brown, 3 to 4 minutes per side.
