Ingredients

  • 2 tablespoons kosher salt
  • 12 beef flanken-cut short rib pieces, excess fat trimmed, or 24 single short ribs (see Notes)
  • 3 tablespoons olive oil
  • ¼ star anise pod
  • 2 tablespoons soy sauce
  • 2 tablespoons freshly ground black pepper
  • 1/3 cup flour
  • + 9 more ingredients
    • 2 cups red wine
    • 1 tablespoon finely chopped fresh thyme
    • 6 cups reduced-sodium beef stock
    • 1 cup dry sherry
    • 2 large yellow onions, finely chopped
    • 2 bay leaves
    • ½ cinnamon stick
    • 2 tablespoons canned tomato paste
    • 2 small carrots, cut into 1/2-in. dice

1. Preheat oven to 300°. Season ribs with salt and pepper and dust lightly with flour. Heat oil in a 10- to 12-in. heavy-bottomed pot over medium-high heat.
