Easy Roast Vegetables and Meatballs

Ingredients

  • 2 Tablespoons Olive Oil
  • 1 teaspoon Smoked Paprika
  • 1 Tablespoon Italian Herb Mix
  • 1 whole Aubergine/Eggplant
  • 2 Courgettes/Zucchini
  • 2 Peppers, If Possible Different Colours
  • 12 pieces New Potatoes
  • + 6 more ingredients
    • ½ teaspoons Garlic Powder
    • ½ teaspoons Onion Powder
    • 1 teaspoon Pepper, Divided
    • 2 Tablespoons Salt, Divided
    • 4 slices Bacon, Diced
    • 1 pound Minced Beef
