Herbed Roast Leg of Lamb with Roasted Onions and Potatoes

Ingredients

  • 1 cup dry red wine
  • 2 cups beef broth
  • 2 pounds small white onions
  • 2 ½ pounds small red or white potatoes
  • ¼ cup dry white wine
  • 4 tablespoons olive oil
  • ¼ teaspoon salt

    • 1/3 cup Dijon-style mustard
    • 1 tablespoon fresh rosemary leaves
    • 3 tablespoons all-purpose flour
    • 2 large carrots
    • 1 8-pound leg of lamb, the pelvic bone removed and the lamb tied

    • fresh thyme sprigs
    • 1 tablespoon fresh thyme leaves
    • fresh rosemary sprigs
    • 1 large garlic clove
    • 2 tablespoons unsalted butter
