Lamb Pitas with Lemon-Mint Sauce

Ingredients

  • 2 bottled roasted red bell peppers, cut into 1/4-inch strips (about 1/2 cup)
  • 1/8 teaspoon salt
  • 1 cup peeled seeded thinly sliced cucumber
  • 2/3 cup plain low-fat yogurt
  • Sandwiches:
  • 4 (6-inch) pitas, cut in half
  • 2 teaspoons grated lemon rind
  • + 13 more ingredients
    • ¼ cup minced fresh parsley
    • 2 tablespoons chopped fresh mint
    • ½ cup finely chopped red onion
    • 6 ounces ground lamb
    • 1 teaspoon minced fresh thyme
    • 2 garlic cloves, minced
    • Sauce:
    • 1/8 teaspoon crushed red pepper
    • ¼ teaspoon ground cumin
    • 6 ounces ground sirloin
    • ¼ teaspoon salt
    • ¼ teaspoon black pepper
    • Cooking spray

To prepare sauce, combine the first 5 ingredients in a small bowl; cover and chill until ready to serve. To prepare sandwiches, heat a large nonstick skillet over medium-high heat.
