Roast Beef with Horseradish-Mustard Sauce

  • 1 (3-pound) sirloin tip roast, trimmed
  • 5 garlic cloves, crushed
  • ¾ cup prepared horseradish
  • Sauce:
  • ¼ cup white vinegar
  • 2 tablespoons ground coriander seeds
  • ½ cup stone-ground mustard
  • + 4 more ingredients
    • Cooking spray
    • Roast beef:
    • 2 teaspoons kosher salt
    • 1 tablespoon cracked black pepper

Preheat oven to 450°. To prepare roast beef, combine first 4 ingredients; rub over roast. Place roast on a broiler pan coated with cooking spray.
