  • 2 tablespoons brine
  • 2 tablespoons capers
  • 1 cup scallions
  • 2/3 cup mild olive oil
  • 1 instant-read thermometer
  • 1 cup fresh flat-leaf parsley
  • 1 3-pound bottom-round beef rump roast
