Ingredients

  • 1 3 1/2-lb trimmed and tied center-cut beef tenderloin roast
  • 4 teaspoons kosher salt
  • 6 rosemary sprigs
  • 2 garlic cloves
  • 3 tablespoons extra-virgin olive oil
  • coarse-grain or Dijon mustard
  • 1 teaspoon black pepper

Put oven rack in middle position and preheat oven to 350°F. Pat tenderloin dry, then coat all sides with salt, pepper, and garlic.
