Slow-Roasted Roast Beef
- 1 teaspoon dried oregano
- 3 cloves garlic, peeled and slivered
- 1 1 3/4-pound rib roast, bone in
- 1 teaspoon freshly ground black pepper
- 2 tablespoons kosher salt
