Spiced Roast Beef and Vegetables

Ingredients

  • 2 tablespoons fresh cilantro
  • 1 garlic clove
  • 1 teaspoon coriander seeds
  • 8 medium carrots
  • 2 ½ pounds russet potatoes
  • 4 tablespoons extra-virgin olive oil
  • ½ teaspoon whole black peppercorns
  • + 5 more ingredients
    • 1 3- to 3 1/4-pound beef eye of round roast
    • ½ teaspoon ginger
    • 1 teaspoon cumin seeds
    • ¾ teaspoon salt
    • 1/8 teaspoon cayenne pepper

Preheat oven to 350°F. Place first 3 ingredients in heavy small plastic bag. Using meat mallet or rolling pin, crush spices. Transfer crushed spices to small bowl; mix in salt, ginger and cayenne.
