Stuffed Tuscany Tenderloin

  • ½ teaspoon salt
  • 2 tablespoons olive oil
  • 1 (4-pound) beef tenderloin, trimmed
  • 1 onion, diced
  • ½ teaspoon freshly ground pepper
  • Garnish: fresh parsley sprigs
  • ½ pound fresh spinach, chopped
  • + 2 more ingredients
    • 1/3 cup shredded Parmesan cheese
    • 3 tablespoons drained and chopped dried tomatoes in oil

Sauté onion in hot oil in a large skillet over medium heat until tender. Add spinach, salt, and pepper, and sauté 1 minute or until spinach wilts.
