Vietnamese-Style Beef Noodle Soup

Ingredients

  • ¼ pound snow peas
  • ½ pound rare roast beef (from deli counter)
  • 3 ½ cups beef broth
  • 6 ounces dried rice-stick noodles (rice vermicelli)
  • 3 tablespoons fresh lime juice
  • 1 teaspoon fresh serrano chile
  • 3 tablespoons Asian fish sauce

    • 1 ¾ cups water
    • ¼ cup fresh basil leaves
    • 3 1/8-inch-thick slices fresh ginger
    • ¼ cup fresh mint leaves
    • 1 tablespoon vegetable oil
    • ¼ cup fresh cilantro leaves
    • 6 ounces fresh bean sprouts
