Walnut-Crusted Roast with Blue Cheese Mashed Potatoes


  • ½ cup(s) crumbled blue cheese
  • 1 beef eye round roast (2 to 3 pounds)
  • 4 cup(s) prepared mashed potatoes, warmed
  • Walnut Crust:
  • ½ cup(s) finely chopped walnuts
  • 3 tablespoon(s) finely chopped green onion
  • ½ teaspoon(s) pepper
