Chicken is a blank slate of the culinary world, so pairing wine with chicken can be as simple or complicated as the recipe. With simple recipes, you’ll want a simple wine. Classic examples of wines to pair with chicken include Beaujolais for red wine and Pinot Gris for white.

Chicken is well suited to an unusually broad range of preparation and seasoning. Its healthy attributes have also made chicken, and in particular chicken breasts, a common and convenient substitution for other meats. This means that you can probably find a chicken recipe to pair with just about any wine. When you’re working in broad generalities, as we are, I’d generally defer to the method of preparation for guidance. Below are some of the most common styles of chicken preparation.

  • 962077Adroblaw What about the spicier chicken preparations? Curries, Stir-fry, Jerk, even some mexican preps, mole etc? Do you need to simply pair to the sauce or spices? Maybe an article on paring with spices would be interesting. Yesterday I made a moroccan chicken tagine which included both spicy (chili peppers) and sweet (honey and dried apricots) all in a tomato broth. I had a Huff Kerner with it that I felt paired pretty well. Would a Reisling, Gewurtztrminer etc be best for these types of prep or something else?

  • 1150512Ferenc Zelenak Adroblaw Gewurtztraminer is a fantastic choice, in a spicy like jerk or girra Caribbean seasoning I would prefer a Riesling Kabinett, Gewurtz, and depends on the spice level and seasoning nice Moscato, from the red for jerk and girra spiced chicken i would even go for Carmenera and Malbec especially with the Jerk you need something heavier to be able to handle the heaviness of the spices not to mention the smoky flavour from the grill.
