Almond-Apricot Chicken with Mint Pesto
Ingredients
- 2 ounces goat cheese
- ½ cup sliced almonds
- 1 tablespoon olive oil
- 1 large egg
- 1/3 cup plain breadcrumbs
- fresh ground pepper
- 4 dried apricots
