Almond-Apricot Chicken with Mint Pesto

  • ½ cup sliced almonds

  • ¼ cup sliced almond
  • ½ cup extra-virgin olive oil
  • 1/3 cup plain breadcrumbs
  • 4 dried apricots
  • fresh ground pepper
