Asian Noodle Bowls with Curried Chicken Meatballs

Ingredients

  • Meatballs:
  • 1 ½ lb ground chicken (dark and light meat)
  • 1 c panko (Japanese bread crumbs)
  • 1/3 c Asian fish sauce
  • 1 ½ T fresh lime juice
  • 1 ½ T green curry paste
  • 1 ½ T palm sugar or brown sugar
  • + 21 more ingredients
    • 1 T Asian sesame oil
    • 2 eggs, lightly beaten
    • 1/3 c sliced green onions
    • 1/3 c finely chopped cilantro
    • 2 T chopped fresh mint
    • 2 t minced fresh ginger
    • 2 t minced garlic
    • Noodle Bowls:
    • 8 oz rice vermicelli noodles
    • 2 c shredded lettuce
    • 1 c fresh mung bean sprouts
    • ½ c carrot, shredded
    • ½ c cucumber, peeled, seeded, and julienned
    • 1/3 c each cilantro leaves and mint leaves, coarsely chopped
    • Asian Dipping Sauce:
    • 2 t palm sugar or brown sugar
    • 2 T fresh lime juice
    • 1 T Asian chili garlic sauce
    • ¼ c Asian fish sauce
    • ¼ c water
    • ¼ c roasted peanuts, chopped optional

Preheat oven to 350 degrees. Line rimmed baking sheet with parchment paper.
