Avocado Chicken Burgers a la Cantina
Ingredients
- mint, cilantro, lime and/or orange wedges, for garnish
- 6 soft hamburger buns or Kaiser rolls, split and lightly toasted
- ¼ cup vegetable oil, divided
- 3 tablespoon finely crumbled cotija cheese
- 2 teaspoon minced jalapeno
- 1 tablespoon chopped fresh mint
- 2 tablespoon minced red onion

- ¼ teaspoon salt
- ½ teaspoon sugar
- 1 teaspoon finely grated orange zest
- 2 teaspoon olive oil
- 1 tablespoon fresh lime juice
- 12 thin slices ripe avocado (from 3 to 4 avocados)
- Citrus Marinated Avocados:
- vegetable oil, for forming patties
- 2 tablespoon minced cilantro
- 2 teaspoon minced garlic
- ¾ teaspoon kosher salt
- 2 teaspoon ground cumin
- 1 tablespoon Ancho Chile Powder
- 1 egg white, lightly beaten
- ¼ cup tortilla crumbs (from the bread crumb section of the store)
- 1 ½ pound ground chicken
To make the patties, in a large bowl combine the ground chicken, tortilla crumbs, egg white, Ancho powder, cumin, salt, garlic and cilantro.
