Avocado Chicken Burgers a la Cantina

Ingredients

  • mint, cilantro, lime and/or orange wedges, for garnish
  • 6 soft hamburger buns or Kaiser rolls, split and lightly toasted
  • ¼ cup vegetable oil, divided
  • 3 tablespoon finely crumbled cotija cheese
  • 2 teaspoon minced jalapeno
  • 1 tablespoon chopped fresh mint
  • 2 tablespoon minced red onion
  • + 16 more ingredients
    • ¼ teaspoon salt
    • ½ teaspoon sugar
    • 1 teaspoon finely grated orange zest
    • 2 teaspoon olive oil
    • 1 tablespoon fresh lime juice
    • 12 thin slices ripe avocado (from 3 to 4 avocados)
    • Citrus Marinated Avocados:
    • vegetable oil, for forming patties
    • 2 tablespoon minced cilantro
    • 2 teaspoon minced garlic
    • ¾ teaspoon kosher salt
    • 2 teaspoon ground cumin
    • 1 tablespoon Ancho Chile Powder
    • 1 egg white, lightly beaten
    • ¼ cup tortilla crumbs (from the bread crumb section of the store)
    • 1 ½ pound ground chicken

To make the patties, in a large bowl combine the ground chicken, tortilla crumbs, egg white, Ancho powder, cumin, salt, garlic and cilantro.
