Baked Chicken and Vegetables in Foil


  • 4 chicken breasts, boneless, skinless (4 to 5 oz. each)
  • salt and pepper to taste
  • 1 teaspoon(s) fresh lemon zest
  • 1 clove(s) (large) garlic, chopped coarsely
  • 2 teaspoon(s) fresh tarragon, chopped
  • 1 zucchini, sliced into ½ inch pieces
  • 1 large carrot, peeled, sliced thin
