Baked Chicken Delight


  • 1 cup rice, uncooked
  • 1 can evaporated milk (about 13 ounces)
  • 4 cups diced cooked chicken
  • 3 tablespoons butter
  • 1 large onion, chopped
  • salt, pepper, sweet basil, rosemary, to taste
  • 2 to 2 ½ cups chicken broth, approximately

Place chicken meat in shallow pan. Sprinkle with salt and herbs to taste. Saute onions in butter until tender-do not let brown! Arrange onion over chicken.
