Brisket with Herbed Spinach Stuffing

Ingredients

  • 1 tablespoon fresh thyme
  • 2 ¼ cups canned chicken broth
  • 1 10-ounce package frozen chopped spinach
  • 2 cups onions
  • 1 4 4-pound flat-cut brisket
  • 2 whole matzo sheets
  • 1 bay leaf
  • + 8 more ingredients
    • 1 tablespoon fresh thyme
    • 2 pounds onions
    • 3 celery stalks
    • 5 garlic cloves
    • 1 large egg
    • 3 large carrots
    • 4 garlic cloves
    • 3 tablespoons olive oil

Heat oil in heavy large skillet over medium heat. Add onions, garlic and thyme; sauté until onions soften, about 5 minutes. Cool 15 minutes. Mix in spinach and matzo.
