Ingredients

  • 1 ½ pounds Brussels sprouts
  • 8 tablespoons unsalted butter
  • 1 ounce dried morel mushrooms
  • 1 cup fresh flat-leafed parsley leaves
  • 2 ½ cups bulgur (preferably coarse)
  • 1 cup onion
  • 2 ounces dried porcini mushrooms
  • + 2 more ingredients
    • 2 ½ cups water
    • 5 cups chicken broth

In a bowl pour boiling water over mushrooms and soak 30 minutes. In a 4-quart saucepan sauté onion in 2 tablespoons butter over moderately high heat, stirring, until softened.
