Butternut Squash Soup

Ingredients

  • 2 medium-size butternut squash
  • 2 T melted butter
  • 1 t ground cinnamon
  • ½ t ground nutmeg
  • ½ t ground cardamom
  • 2 T olive oil
  • ½ c chopped onion

    • Salt and pepper to taste

Preheat oven to 425 degrees. Cut squash in half, remove seeds and place in a baking dish. Combine butter, cinnamon, nutmeg and cardamom. Fill squash cavities with equal amounts of butter mixture.
