Ingredients

  • 1 teaspoon mild curry powder
  • 2 tablespoons unsalted butter
  • Salt and pepper
  • 4 teaspoons apricot jam
  • ¼ cup heavy cream
  • ½ cup canned crushed pineapple, drained
  • 4 (6 oz.) boneless, skinless chicken breast halves

Preheat oven to 400°F. Tear out 4 large foil squares. Place a chicken breast in center of each; season with salt and pepper.
