  • 1 tablespoon fresh rosemary leaves
  • ½ cup fresh flat-leafed parsley leaves

  • 4 celery ribs
  • ¼ cup unsalted butter
  • 6 cups bite-size pieces crusty country-style bread
  • 2 cups turkey giblet stock or chicken broth
