Chicken and Black Bean Enchilada Casserole

Ingredients

  • 2 Roma tomatoes, chopped (for garnish)
  • 3 cup rice, cooked
  • 2 pound rotisserie chicken, shredded
  • 3 cup cheese, shredded
  • 1 cup sour cream
  • 1 (15 oz.) black beans, drained and rinsed
  • 1 (10 oz.) can enchilada sauce
  • + 10 more ingredients
    • 1/8 teaspoon ground red pepper
    • 1 teaspoon chili powder
    • 1 teaspoon ground coriander
    • 1 teaspoon cumin
    • 10 (8 in.) flour tortillas
    • 1 (4oz.) can diced green chilies
    • 3 garlic, minced
    • ½ green pepper, chopped
    • ½ onion, chopped
    • 1 tablespoon olive oil

Preheat oven to 350 degrees. In a skillet saute onion, garlic and bell pepper in olive oil until tender-crisp. Add chicken, cumin, coriander, chili powder, red pepper, green chilies, and sour cream.
