Chicken and Fresh Corn Enchilada Bake


  • 1 c roasted green chiles or 3 (4 oz.) cans green chiles
  • ½ c fresh cilantro
  • 3 large green onions, coarsely chopped
  • 2 garlic cloves
  • 1 lime squeezed
  • ½ c heavy cream or cream cheese
  • 8 corn tortillas, warmed
  • + 3 more ingredients
    • 2 c pulled chicken meat
    • 1 c fresh corn kernels
    • 4 oz shredded Mexican cheese, such as queso or Monterey Jack
