Chicken Polenta Squares

Ingredients

  • 10 ounce arugala, washed and dried
  • 1/3 cup fresh parsley, chopped, divided in half
  • spray cooking oil
  • 8 oz fontina cheese, grated
  • 2 tablespoon dry basil
  • ½ cup grated parmesan cheese
  • 4 oz. jar chopped red pimento pepper, drained
  • + 17 more ingredients
    • 2 tablespoon butter, room temp.
    • 2 cup yellow corn meal
    • 1 cup heavy cream
    • 3 14 ounce cans chicken broth
    • ½ teaspoon pepper
    • ½ teaspoon salt
    • 4 garlic cloves, chopped fine
    • 1 cup yellow onion, chopped
    • 2 tablespoon extra virgin olive oil
    • 2 lb cooked rotisserie chicken from grocery, cooled
    • ¼ cup lemon juice
    • 1 garlic clove, chopped fine
    • ¼ teaspoon pepper
    • ¼ teaspoon salt
    • 1/3 fresh basil, chopped
    • ¼ cup extra virgin olive oil
    • 2 ripe tomatoes, seeded, diced small
