Chicken Rustico

Ingredients

• 2 tablespoon oil (olive, canola or veg.)
• teaspoon pepper
• ½ teaspoon salt
• 1 2 tablespoons fresh marjoram
• 2 fresh basil leaves (finely chopped)
• 3 garlic (minced)
• 1 pint fresh cherry or grape tomatoes
• + 2 more ingredients
• • 1 14.5 ounce diced tomatoes with onion
  • 6 chicken thighs

In a 9x12 baking dish, mince garlic cloves into the salt, add tomatoes, fresh and canned (do not drain), add basil, marjoram and salt, mix. Lightly sprinkle chicken with salt and pepper.
