CHICKEN SAUSAGE STUFFED SWISS CHARD BUNDLES WITH FIRE ROASTED TOMATO SAUCE

Ingredients

  • Olive oil flavored cooking spray
  • ½ c tomato sauce
  • 1 (14.5 oz) can Fire Roasted Diced Tomatoes
  • ¾ c freshly grated Parmesan cheese (divided use)
  • ¼ c chopped fresh basil (divided use)
  • ¼ t crushed red pepper flakes
  • ½ t freshly ground black pepper
  • + 12 more ingredients
    • ½ t Kosher salt
    • 1 ¼ t crushed fennel seeds
    • 1 t paprika
    • 1 ¼ t dried oregano leaves
    • 1 ¾ t rubbed sage
    • 1 lb lean ground chicken
    • 1 T minced garlic
    • 1 c chopped onion
    • 1 c chopped Swiss Chard stems
    • 1 ½ t extra virgin olive oil
    • ½ c uncooked orzo
    • 8 large Swiss chard leaves, preferably "Bright Lights" (see Note)
