Chicken, Vegetable and Cornbread Cobbler

Ingredients

  • 3 tablespoons vegetable oil
  • 1 lb boneless chicken thighs, cubed
  • 1 large onion, chopped
  • 1/3 cup all-purpose flour
  • 2 teaspoons cajun seasoning
  • 1 ¾ cups water
  • 1 ½ cups corn

    • 1 ½ cups lima beans
    • 2 medium carrots, sliced
    • 1 (8 ½ ounce) box cornbread mix
    • 1/3 cup milk
    • 1 egg
