  • 1 lemon, cut in half
  • 1 teaspoon sea salt, divided
  • 1 orange, cut in half
  • ½ teaspoon freshly ground black pepper
  • 1 (3 1/4-pound) whole free-range chicken
  • 2 teaspoons dried oregano, divided
  • 2 cups water, divided
  • + 2 more ingredients
    • Cooking spray
    • 1 tablespoon unsalted butter, softened

Preheat oven to 450°. Remove and discard giblets and neck. Rinse chicken with cold water; pat dry. Sprinkle 1 teaspoon oregano, 1/2 teaspoon salt, and pepper in body cavity.
