Chicken with Grapes, Goat Cheese & Pine Nuts
Ingredients
- 1 teaspoon freshly ground McCormick Gourmet Collection Black Peppercorns, Tellicherry
- 1 teaspoon McCormick Gourmet Collection Sicilian Sea Salt
- 1 ½ teaspoons McCormick Gourmet Collection Thyme Leaves , divided
- 2 to 4 tablespoons pine nuts, toasted
- 1 ½ teaspoons McCormick Gourmet Collection Mint Flakes , divided
- 6 ounces goat cheese (chevre), softened
- ¼ cup balsamic vinegar or vino cotto

- 2 cups red and green grapes, halved
- ¼ cup olive oil
- ½ red onion, thinly sliced
