  • ½ cup all-purpose flour
  • 2 medium-size green peppers, chopped
  • ½ teaspoon ground thyme
  • Chutney
  • Fresh parsley sprigs
  • ½ teaspoon white pepper
  • ¾ cup currants

    • 2 cups hot cooked rice
    • 1 cup slivered almonds, toasted
    • 2 (14 1/2-ounce) cans whole tomatoes, undrained and chopped
    • ½ cup lard
    • 2 teaspoons curry powder
    • 1 clove garlic, minced
    • 2 teaspoons salt, divided
    • ½ teaspoon pepper
    • 1 (3- to 3 1/2-pound) broiler-fryer, cut up and skinned
    • 1 tablespoon chopped fresh parsley

Combine flour, 1 teaspoon salt, and pepper, and mix well. Dredge chicken pieces in flour mixture. Heat lard in a heavy skillet.
