Creamy Tomato-Stuffed Chicken
Ingredients
- ¼ cup chopped dried tomatoes (not in oil)
- ½ (8-ounce) package 1/3-less-fat cream cheese
- ½ teaspoon pepper, divided
- ½ teaspoon salt, divided
- 1 pound skinned and boned chicken breast halves (4 breast halves)
- ¼ cup shredded Parmesan cheese
- 2 teaspoons red wine vinegar

- 6 plum tomatoes, chopped
- Vegetable cooking spray
- ½ cup chopped fresh basil, divided
- 3 garlic cloves, minced and divided
Place chicken between 2 sheets of heavy-duty plastic wrap, and flatten to 1/4-inch thickness using a meat mallet or rolling pin. Sprinkle evenly with 1/4 teaspoon salt and 1/4 teaspoon pepper.
