Fig-Glazed Quail

Ingredients

  • 3 cups chicken broth, divided
  • 2 tablespoons butter or margarine
  • 10 dried figs, coarsely chopped
  • 2 to 3 tablespoons vegetable oil
  • ½ teaspoon ground cinnamon
  • 2 tablespoons cornstarch
  • 2 tablespoons maple syrup
  • + 6 more ingredients
    • ¼ cup water
    • 12 quail, dressed*
    • 1 tablespoon grated orange rind
    • ¾ teaspoon pepper, divided
    • 2 teaspoons salt, divided
    • ½ cup fresh orange juice

Stir together first 6 ingredients in a small saucepan. Add 1 cup chicken broth. Bring to a boil; cover, reduce heat, and simmer 10 minutes. Cool 5 minutes.
