  • Freshly ground black pepper
  • 1 teaspoon dark soy sauce
  • 2 green onions, cut into 2-in. lengths and then into slivers
  • 1 tablespoon dark brown sugar
  • 1 pound boned, skinned chicken thigh meat, cut into bite-size pieces and strips
  • One 1-in. piece ginger, peeled and cut into thinnest possible slivers
  • 1 tablespoon soy sauce (regular)

1. In a large bowl, combine soy sauce, brown sugar, dark soy sauce, and ginger. Add chicken, toss to coat, cover, and chill for at least 1 hour and up to overnight. 2. Preheat oven to 375°.
