Georgia Chicken Scallop

Ingredients

• ¹/₃ cup chopped celery
• 2 cups chicken broth
• 2 eggs, beaten
• ¹/₈ teaspoon poultry seasoning
• ¼ cup chopped pimiento
• ¾ teaspoon salt
• Mushroom Sauce
• + 2 more ingredients
• • ¹/₃ cup uncooked regular rice
  • 2 ½ cups diced cooked chicken

Combine rice and broth in a medium saucepan; bring to a boil. Cover; reduce heat, and simmer 10 minutes. Add chicken, eggs, celery, pimiento, salt, and poultry seasoning to rice mixture; stir well.
