Greek Macaroni & Cheese

Ingredients
- 1-½ Tbs. chopped fresh oregano leaves, or 1 tsp.dried oregano
- 2 Tbs. olive oil
- 1 lb. farfalle (bow-tie) pasta
- ¼ cup grated Parmesan cheese, for garnish
- 1 tsp. kosher salt, plus more for salting the pasta water
- 1-½ cups crumbled feta cheese (about 7 oz.)
- 3 medium tomatoes, diced (2 cups)

- 2 skinless, boneless chicken breasts (about ¾ lb.), cut into 2 by ½-inch strips
- 2 cups dry white wine, such as Chardonnay
- 5 packed cups fresh spinach leaves (about 8 oz. or 2 bunches), washed and stems trimmed
- 2 Tbs. unsalted butter
- 1 cup pitted Kalamata or other black olives
- ¼ cup all-purpose flour
- 1 Tbs. finely chopped garlic (about 2 large cloves)
