Ingredients

  • 2 Tbs. unsalted butter
  • ½ tsp. freshly ground black pepper
  • 3 medium tomatoes, diced (2 cups)
  • 1-½ Tbs. chopped fresh oregano leaves, or 1 tsp.dried oregano
  • 1 tsp. kosher salt, plus more for salting the pasta water
  • ¼ cup grated Parmesan cheese, for garnish
  • 2 cups dry white wine, such as Chardonnay
  • + 8 more ingredients
    • 5 packed cups fresh spinach leaves (about 8 oz. or 2 bunches), washed and stems trimmed
    • 1 lb. farfalle (bow-tie) pasta
    • 1 Tbs. finely chopped garlic (about 2 large cloves)
    • ¼ cup all-purpose flour
    • 1-½ cups crumbled feta cheese (about 7 oz.)
    • 2 Tbs. olive oil
    • 2 skinless, boneless chicken breasts (about ¾ lb.), cut into 2 by ½-inch strips
    • 1 cup pitted Kalamata or other black olives

Arrange the chicken strips in a single layer on a plate or baking sheet (this makes it easier to season and dredge them). Sprinkle evenly with 1/4 tsp. salt and 1/8 tsp. black pepper.
