Ingredients

  • 1 turnip peeled and cut into 1/2-inch pieces (8 ounces)
  • ¼ teaspoon cinnamon
  • ½ large white onion, chopped
  • ½ cup extra-virgin olive oil
  • 1 ½ tablespoons fresh lemon juice
  • 1 2-pound hanger steak
  • 1 tablespoon unsalted butter
  • + 9 more ingredients
    • 1 tablespoon ground cumin
    • 1 ½ cups bulgur, rinsed (9 ounces)
    • ½ cup chicken stock
    • 2 tablespoons chopped mint
    • 1 ½ cups boiling water
    • 2 cloves garlic, minced
    • Kosher salt and freshly ground pepper
    • ½ cup chopped flat-leaf parsley
    • 2 carrots, cut into 1/2-inch pieces

Preheat the oven to 350°. In a small bowl, mash the garlic, cumin, 1 tablespoon of salt and 1 teaspoon of pepper with 2 tablespoons of the oil; rub all over the steak.
